Ingredients: 3⅔ cups (20⅛ ounces/571 grams), bread flour; 2¼ teaspoon, instant or rapid-rise yeast; 1½ teaspoons, table salt; 1 cup, water, room temperature; 2 , large eggs, plus 1 large yolk; ½ cup (3½ ounces/99 grams), granulated sugar sugar; 12 tablespoons, unsalted butter, cut into 12 pieces, softened; ⅓ cup (1 ounces/28 grams), unsweetened cocoa powder; 2 ounces (57 grams), bittersweet chocolate, chopped; 4 tablespoons, unsalted butter; 3 tablespoons, unsweetened cocoa powder; ¼ cup (1 ounces/28 grams), confectioners' sugar; 1 , large egg white; 1 , large egg, lightly beaten with 1 tablespoon water
