Lan Lam

Lan Lam is a Deputy Food Editor for Cook's Illustrated and cast member of America's Test Kitchen. She's a line cook turned recipe developer whose interest in the science of cooking was piqued while she studied chemistry at Wesleyan University. This grounding in scientific inquiry, in combination with the technical skills acquired in restaurant kitchens, helps her find new and creative approaches to cooking and baking.
