Tips for Putting More Filling into Filled Doughnuts
Filling doughnuts can be a mess, but it doesn't have to be.
Here are a few tricks we learned while developing our Jelly Doughnuts recipe that will help ensure that a substantial amount of jelly (or other filling) makes it into the doughnut and stays put.
1. Cut a Pocket
Inserting a paring knife into the doughnut until it almost reaches the opposite side and then swinging it through the interior clears space for the filling and helps ensure that it distributes evenly.
2. Create a “Filling Station”
Standing the doughnuts slit side up in a 13 by 9-inch baking pan allows you to hold the pastry bag with both hands, making it easier to angle the pastry tip and fill all 12 doughnuts quickly.
3. Go Deep
Inserting the pastry tip ¾ inch into the opening allows you to get the filling deeper into the pocket before the filling starts to squeeze out.
